Long Time, No Blog :(

I can't even begin to say how stressful and busy life has been recently. So, I apologize for no new blogs :(

So, I'm going to start with the bad news because I want to save the best for last! In the past month and a half I have been searching for a new job, dealing with having no money EVER, and I have been in a car accident. Honestly, the worst part about all of that is I still don't have a second job :( I have pretty much lost hope with that because I have learned that it's not about what you know, but WHO you know.  And apparently I don't know very many people. I've applied to over 200 job, I've had approximately 20+ interviews, and only 5 employers have actually called me back to tell me that I "wasn't what they were looking for" :/ Frustrating? YES! However, I can't give up because I really need a second job...I don't have a choice.

Time for the good news, sorry if I made you feel depressed. So, the good news is that I'm moving into my parent's basement :) I know that doesn't sound good, but it is such a blessing for me and Geo right now! We get more space, like triple the space, for a whole lot less :) Which is so awesome in my opinion. The other good news is that I'll hopefully be able to go back to school starting in January and I actually know what I want to do :) I wanted to go to hair school, but I've decided that I should get my degree in business before I start anything else. That way all the college I have done won't go to waste because it's out-dated. You know what I mean? Anywho, that's my plan :)

So, about the accident. It wasn't horrible, but mine and Geo's back is pretty messed up now and our car insurance isn't the best, but we'll deal :) I've decided that the trick to happiness is to ALWAYS stay positive :)  It's difficult, but it does make me feel a whole lot better and I find that I feel more motivated when I'm in a positive mood!

You ready for more good news :) Three of my sisters are now pregnant and I couldn't be happier for them, I'm so excited for new nieces and nephews :D

What's going on in the Hernandez apt :)

Hi there everybody :)

So I know it's been a while since I've posted, but I've been pretty busy recently :( Anywho, so last time I posted I got a lot of recipes and I've only tried one...haha. Unfortunately, it didn't go well at ALL. I tried the Crispy Herb Baked Chicken recipe that my sister, Trish posted. I don't know what I did wrong, but the Crispy Herb part decided not to stick to my chicken :(  It seriously peeled right off and I was really disappointed, thus I didn't take any pictures of it. But no worries, I am not giving up...I still have a lot of recipes I want to try :D Last night I made lazy day lasagna because I didn't get home from work until 7:45pm, making for a really late start. I knew I had all the ingredients so I threw it together as quickly as possible. It turned out to be even better than last time...it was SOOOOOO good :) 

So here's the recipe and I took lots of pictures :)

- Half pound of ground beef
- 1(16 oz) jar of tomato sauce, chunky is the best for this recipe
- 16 oz of cottage cheese
- 1 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1 package of egg noodles(12oz)

So, you start by filling up a 5 quart pot 3/4 of the way with water and bring it to boil. Then of course you add the noodles and let them cook until they are almost done. Then strain the noodles and run cold water over them so that they don't keep cooking because they will cook more in the  oven, so you don't want them coming out over done. At the same time you want to be browning the meat. When that's done you want to drain the meat and add it to the sauce.    

This is me cooking the beef, sauce, and noodles.
 I strained the noodles and rinsed them with cold water.  Once you've finished cooking everything on the stove, you can start on the cheese mixture.  You want to take a large mixing bowl and mix the cottage cheese, parmesan cheese, and mozzarella cheese.  

After that, you want to mix in the noodles with the cheese mixture and make sure the noodles are covered evenly with the cheese mixture.
 Now for the fun part, layers :) I used a 13X9 casserole dish. First, you layer the bottom with 1/3 of the sauce and try to get it evenly covered, obviously I didn't do the best job with this...haha, but I was in a hurry :)

 Second, you add 1/2 of the noodles for the second layer and spread them evenly. You might think there won't be enough room in the casserole dish for all 5 layers, but trust me...it all fits :)
 Third, add another 1/3 of the sauce and spread evenly.
 Fourth, add the rest of the noodles mixture and spread it evenly :)
 And last, but not least, add the rest of the sauce and mozzarella cheese :) I used chedder cheese as well just for the top because I like the way it tastes :) Now time to stick it in the oven at 350 degrees and let it cook for about 5-10 minutes or until the cheese is bubbly :)
 And now you're done and it's time to eat this deliciousness :)



Okay, so now I get to talk about Geo and I :)  Geo is doing Awesome in school :) He is loving his animation classes and he's already sticking out to his teachers, which is always good :)  He's also gotten two new video games over the past 3 weeks and he's enjoyed playing those when he needs to unwind.

I am doing okay, however, I still don't have a second job so Geo and I are pretty broke at the moment :( I've had 5 interviews over the past 3 weeks, but no job :(  I've applied to about 25 jobs, so it's getting pretty frustrating, but I'm not losing hope :)  Maybe next time I post I'll have a second job :)

So, I have also posted pictures of my new car, however, there have been a few renovations since I've gotten it :) Geo decided to surprise me when I got off work the other day, I was so happy...I couldn't quit smiling and admiring on my way home :D I LOVE my husband :D

Food, Food, Food :D

Sooooo, recently I've been trying to cook homemade meals for me and Geo, instead of eating out all the time. We were eating out probably 3-4 times a week, talk about MAJOR weight gain...haha. Seriously, it was becoming  a very unhealthy habit and it also costs a ton of money.  Overall, it was just a bad situation.  However, I am now cooking homemade meals that have all tasted AMAZING :D In the past week and a half, I have made chicken divan, lazy-day lasagna, and homemade mac & cheese (my personal favorite thus far).  The best part is that i cook enough for two nights, although the mac & cheese will probably last about 3. That way I don't have to make a meal every night :) And I make food that taste great even the second day :) It's pretty much Awesome and a lot healthier! So, I want comments on this post with favorite recipes that are inexpensive to make and somewhat healthy :) So, if you have any, post them in a comment for me, Please? :)

Also, I have some good news to report :) Geo and I finally got a new car and I LOVE it soooooo much :) It's a 2000 Honda Civic with 153K on it and it's in really good condition...talk about a steal :D It only cost $2700 and it's listed on Kelly Blue Book for $3850...kind of crazy that we got it for such a great price :)

I have to apologize, I still haven't gotten started on any of the projects that I want to do :( Not because I don't have time, but because I don't have money...haha. Geo's almost done with our microwave cart though, which I can't wait for :) I'm sick of having to keep the microwave on my kitchen counter, it doesn't give me much space to work on at all, but oh well.

Better Late Then Never :D

So, I've already completely failed at this once a week post thing.  Anyway, not a whole lot has happened since I last posted.  Me and Geo are still doing AWESOME :D We sold our car last week and are in the process of trying to find a new and I must say I HATE car shopping...it is no fun at all :( Although, tomorrow me and Geo are going to look at a '97 Honda Accord for $2300, so I'm really hoping that works out :) I also have applied for a second job where I get to choose my own hours, as long as I go in for 4 hours a day between 8-5, and it pays $13 an hour so I'm crossing my fingers for that one :) That's all my updates for now! Actually, one more thing...Geo starts school next week and we've already put in $500 towards books and supplies :( School is sooooo beyond expensive and he isn't even in his major yet :/

Anyway, I have a few projects in mind that I want to do to spice up my little apartment :) First, I want to make zebra print curtains for my bedroom and some curtains for my kitchen.  When I start on those I will for sure put up the before and after pics. Geo has actually already started on our microwave cart, but unfortunately I didn't get any before pics :( But, I can't wait for that to be finished :) Another project I want to work on is organizing my accessories, I have a few ideas, but it's driving me crazy with how unorganized it all is.  My third project is to reupholster the cork board thingy on our desk...I'll post pics when I finish that as well, so you might actually know what I'm talking about.  So, yeah...those are all the projects I want to do, but have yet to start and who know when I will. I'm such a horrible procrastinator :/ Well, that's it for now....hopefully next week, I'll have more exciting news to announce and maybe one of my projects complete :)

About my Blog :)

Hey Everyone,

So, this is my blog! I'm really bad at writing so I apologize, in advance, if I bore anyone. My sister, Trish, is the one who convinced me to write a blog and my plan is to post at least once a week. We'll see how that works because I'm usually pretty bad about routines.

The point of my blog is simply to show people ALL the many things I will experience as a young newlywed. Geo and I are both 19 and many may think that's too young. I agree we are fairly young, but I'm excited to learn and grow with my husband. We've only been married for a little over a month and I LOVE every second of it :) The name of my blog represents what it will be about. I will write about everything I learn in marriage and life, along with my hopes and dreams.

Well, this is all I really have to say for know, but I promise my future postings will be more interesting :)
