What's going on in the Hernandez apt :)

Hi there everybody :)

So I know it's been a while since I've posted, but I've been pretty busy recently :( Anywho, so last time I posted I got a lot of recipes and I've only tried one...haha. Unfortunately, it didn't go well at ALL. I tried the Crispy Herb Baked Chicken recipe that my sister, Trish posted. I don't know what I did wrong, but the Crispy Herb part decided not to stick to my chicken :(  It seriously peeled right off and I was really disappointed, thus I didn't take any pictures of it. But no worries, I am not giving up...I still have a lot of recipes I want to try :D Last night I made lazy day lasagna because I didn't get home from work until 7:45pm, making for a really late start. I knew I had all the ingredients so I threw it together as quickly as possible. It turned out to be even better than last time...it was SOOOOOO good :) 

So here's the recipe and I took lots of pictures :)

- Half pound of ground beef
- 1(16 oz) jar of tomato sauce, chunky is the best for this recipe
- 16 oz of cottage cheese
- 1 cup mozzarella cheese
- 1/4 cup parmesan cheese
- 1 package of egg noodles(12oz)

So, you start by filling up a 5 quart pot 3/4 of the way with water and bring it to boil. Then of course you add the noodles and let them cook until they are almost done. Then strain the noodles and run cold water over them so that they don't keep cooking because they will cook more in the  oven, so you don't want them coming out over done. At the same time you want to be browning the meat. When that's done you want to drain the meat and add it to the sauce.    

This is me cooking the beef, sauce, and noodles.
 I strained the noodles and rinsed them with cold water.  Once you've finished cooking everything on the stove, you can start on the cheese mixture.  You want to take a large mixing bowl and mix the cottage cheese, parmesan cheese, and mozzarella cheese.  

After that, you want to mix in the noodles with the cheese mixture and make sure the noodles are covered evenly with the cheese mixture.
 Now for the fun part, layers :) I used a 13X9 casserole dish. First, you layer the bottom with 1/3 of the sauce and try to get it evenly covered, obviously I didn't do the best job with this...haha, but I was in a hurry :)

 Second, you add 1/2 of the noodles for the second layer and spread them evenly. You might think there won't be enough room in the casserole dish for all 5 layers, but trust me...it all fits :)
 Third, add another 1/3 of the sauce and spread evenly.
 Fourth, add the rest of the noodles mixture and spread it evenly :)
 And last, but not least, add the rest of the sauce and mozzarella cheese :) I used chedder cheese as well just for the top because I like the way it tastes :) Now time to stick it in the oven at 350 degrees and let it cook for about 5-10 minutes or until the cheese is bubbly :)
 And now you're done and it's time to eat this deliciousness :)



Okay, so now I get to talk about Geo and I :)  Geo is doing Awesome in school :) He is loving his animation classes and he's already sticking out to his teachers, which is always good :)  He's also gotten two new video games over the past 3 weeks and he's enjoyed playing those when he needs to unwind.

I am doing okay, however, I still don't have a second job so Geo and I are pretty broke at the moment :( I've had 5 interviews over the past 3 weeks, but no job :(  I've applied to about 25 jobs, so it's getting pretty frustrating, but I'm not losing hope :)  Maybe next time I post I'll have a second job :)

So, I have also posted pictures of my new car, however, there have been a few renovations since I've gotten it :) Geo decided to surprise me when I got off work the other day, I was so happy...I couldn't quit smiling and admiring on my way home :D I LOVE my husband :D

  2. It's been so long since I've eaten lazy day lasagna! Michael doesn't do cottage or ricotta cheese : ( Maybe you should make me some when we meet up in FL : )
